“DEVIL DOVES”

Prep time: 15 min. Cook time: 45 min. Total time: 1 hour. Servings: 4-6 as an appetizer.

• 24 dove breasts, bone removed

• 24 pitted dates cut in half (or another dried fruit of choice)

• 24 tsp. soft goat cheese (or blue cheese, Gorgonzola or other soft cheese)

• 24 small sprigs thyme

• 24 strips of bacon

1. Preheat oven to 400 degrees. Lay the deboned (whole) dove breast skin side down and place two date halves in the center.

2. Lay a tsp. cheese on top, then a sprig of thyme. Place a strip of bacon on the plate, gather the dove breast together and place at one end of the bacon. Roll the bacon around the dove breast until it is fully covered.

3. Set on a sheet tray with bacon seam side down; repeat until you have all doves stuffed, wrapped and lined up on a sheet tray.

4. Place in oven and cook for 35-45 minutes or until the bacon is crispy. Serve immediately!
